Virtual Sensory Session: Managing yeast nutrition

Winemakers from around Virginia gathered (virtually) to learn about managing yeast nutrition from special guest Amanda Stewart, Associate Professor of Food Science and Technology at Virginia Tech and to taste results of two experiments. In the first, Rick Tagg (Delaplane Cellars) tested the effects of the specialized nutrient Stimula Chardonnay compared to Fermaid O. In the second, Michael Heny (Michael Shaps Wineworks) explored the omission of DAP in Tannat fermentation.
