Comparing Malic Acid Testing Strategies: Enzymatic kits vs. the Sentia Analyzer

Matthieu Finot, Kirsty Harmon, and AJ Greely

Three Virginia winemakers discuss their experiments comparing malic acid testing strategies. Each ran four different types of samples (juice, white wine, red wine before malolactic fermentatioin and red wine post-malolactic fermentation) in replicate using the enzymatic kit of their choice and the Sentia Analyzer. The discussion includes measures of precision, accuracy, cost, and ease of use for each technique.

Note: Experimenter C experineced some systematic error discussed during the video. Subsequent investigation revealed this error was due to micropipettes that were not well calibrated.
