This valuable resource details important principles of cellar operations from fruit arrival to bottling. Written by winemakers working in small to medium sized production facilities, it is both practical and informative. The handbook is meant to work in concert with on-the job training, helping to reinforce the principles you are teaching in the winery. Many thanks to Scott Dwyer (WRE Board member and former Exchange Coordinator) for spearheading this project, and the Virginia Wine Board for funding the development of this resource.
