In 2023, Zach Pierce from Ingleside Vineyards explored how the timing of malolactic inoculation impacted the chemical and sensory characteristics of Sangiovese, Merlot, and Petit Verdot as well as cellar efficiancy. While this experiment did not result in any notable differences in wine chemistry or sensory characteristics, co-inoculation may speed up the process in years with slower rates of malolactic fermentation.
