Introduction SO2 Management No and Low Alcohol Wines The Wine Microbiome Acidity Management in Extreme Climates

Introduction

The Eastern Viticulture and Enology Forum (EVEF) is a collaborative, research-based webinar series developed by Cornell University and Penn State Extension, with support from several other academic and extension institutions. Designed for both grape growers and winemakers, the series addresses key challenges in the wine and grape industry—including nutrient management, disease control, mechanization, pH regulation, native fermentation, and the production of low- and no-alcohol wines. Each session features expert-led discussions, technical demonstrations, and interactive Q&A segments that connect cutting-edge research with practical, field-level implementation.

Registration details for upcoming EVEF sessions will be posted in the Events section of our website. If you're unable to attend live or wish to revisit a previous topic, this learning module provides easy access to recordings of past sessions, all in one convenient location.

Eastern Viticulture & Enology Forum: SO2 Management--Putting Principles into Practice

Jan 28, 2025

Joy Ting, Kirsty Harmon, and Matthieu Finot

Most winemaking textbooks discuss the chemistry of SO2, and most winemakers are trained to apply it at various stages of winemaking for its antimicrobial and antioxidant properties. However, many practical questions remain about its effective use. In this seminar, two experienced winemakers (Kirsty Harmon and Matthieu Finot) share findings from production-scale experiments, focusing on the ideal timing and amounts of SO2 additions, SO2 depletion in the bottle, and approaches to reduce SO2 usage while preserving wine quality.

This webinar integrates the results of several WRE trials to form a cohesive picture of SO2 management.

Eastern Viticulture & Enology Forum: Producing and Positioning Low and No Alcohol Wines

Feb 25, 2025

Chris Gerling and Aude Watrelot

Demand for low and no alcohol wine is on the rise, but practices to achieve this often come with challenges of their own. This seminar covers the technical foundation of de-alcaholization, their effects on wine components, as well as strategies to restore aromatics and flavor to the finished product. Chris and Aude discuss business and marketing approaches to introduce these products, and address the importance of adapting both winemaking protocols and sensory perceptions to deliver balanced, appealing alternatives for modern markets

Eastern Viticulture & Enology Forum: The Wine Microbiome–Implications for the wine industry

March 18, 2025

Molly Kelly

Dr. Molly Kelly, Enology Extension Educator at the Pennsylvania State University, outlines her ongoing research investigating changes in microbial populations, particularly non-Saccharomyces yeasts, during native fermentations. Could this be used to define your microbial terroir? The presentation is followed by an exciting discussion with two producers of "naturally" fermented wines, exploring their philosophies, best practices, and challenges.

Eastern Viticulture & Enology Forum: Acidity Management Techniques in Northern and Southern Extremes [and everything in between!], Texas vs. Minnesota

April 29, 2025

Drew Horton and Andreea Botezatu

“It’s easy to grow great wines in California” people say, but what about the challenges faced by winemakers working at the extremes of climate? Texas grown vinifera can be low in acidity and high in sugar and pH, and cold-climate U of MN grapes often present the opposite challenges to making balanced wines. Watch as they discuss new research, techniques, and tips for making wines “on the edges” of climate.
